if you have the ability to start w/ a 500cc you're probably not from Europe lol (license restrictions) — i myself started on a (restricted) 50 2-stroke, and started fitting mods to what is currently my fastest either the 70 Jetforce (~50hp w/ nitrous) or 80 MHR Derbi (23hp) (both have a power-to-weight of 1:4 or less)

that said

i assume you're looking for a newer one? 2020 model and onwards

it mostly depends on your environment and your riding style/plans with the bike

to which there is no 'one-size-fits-all' solution

as for general advice

it's more of a touring-style bike so you'll tend to have a more laid-back riding experience, but also do not underestimate a 500cc, especially Honda's and Yamaha's models

both brands use Parallel-Twin engine layouts, and to keep it understandable; those engines pull HARD hard. the amount of torque they generate is out of this world for their engine size.

if you really, really want that specific bike, and are a mature and responsible rider, i'd say go for it. But know your limits and know you are riding a machine that is powerful

otherwise i'd look into a light 250cc. They are a lot more forgiving, still a lot of fun (more than a 125) and keep up on the highways alright enough

if you know you're not gonna be able to control yourself (and there's no shame to that, i'll admit that about myself any day) you're better off just hard-capping yourself to your bike's limits just simply for safety and getting to learn

but please, for the love of god, do NOT get either a super-sport bike OR a supermoto as your first bike

that is a solid death sentence, and believe me i know since i own a sumo

(1000cc) supersports are too fast for even the average experienced rider to handle, and supermoto's ride like a drunk donkey using illegal substances
