I'm using BT headset, and the shortest answer to your question is - use a dedicated microphone.
BT has a limited bandwidth and predefined connection types - either "music" utilizing whole bandwidth for audio quality, or "headset" which splits the bandwidth between audio and recording, which leaves you with mono radio quality... That's how it is.
Gaming headsets are dealing with this by either using a proprietary protocol or just two separate bt channels.
