I had a very hard time doing scav runs for the longest time, but use them as practice for where to be at what times, and just really fine tune the fundaments of the game. Over time you'll get better and better. Only other tips I should say would be to steer clear of any paths you know a lot of people take if you don't want pvp. There was a point I would only play the game every half an hour in between something else because I wanted to play but couldn't get over the gear fear.

Anything you find a lot of is probably not worth keeping in your stash for a long time
