generally a good idea to insure if you can, but to give a more nuanced answer, insure shit that you don't wanna lose. also think about what you're planning to do in raid. if i'm going in to farm scavs for a quest, i'm definitely insuring my shit bc if i get one tapped by a shotgun scav, good chance nobody stumbles on my body and the ai scavs wont loot you.

also you can also take other shit you find and hide your insured gear in a bush

yessur, say you insure your armor, gun, and rig, kill or find a dead pmc, you can drop your armor, gun, and rig in a bush and take his. you're pretty much guaranteed to get your stuff back, and if you survive you get the loot as well!

If you want to guarantee profit, you can always enter the cycle of scavving and offline-PMCing while your scav is on cooldown. Scavving can only make you money, you can't lose anything . Offline is great for learning maps and getting good at killing scavs and scav bosses. This cycle is great to simply build up lots of money while learning - which makes online PMCing far easier.

Ammo has 2 qualities that you should focus on - Damage and Penetration.
Damage is the damage done to unarmored parts of the target.
Penetration is the ability of an ammo type to get through particular tier of armor.

Both matter, and it's most important that you know what side of the spectrum your ammo leans. Ammo that is very high in damage will be very low in penetration, and vice-versa.
So if you're using penetration forward ammo - you know you can aim for head and chest.
If you're using damage forward ammo, you should be aiming for legs, face, or other exposed areas.
