If I was building a work station solely for working, I would most likely choose the 3700x because because of it's higher core and thread count.
The price for the 3700x and 5600x is the same
it comes down to preference and the main role it will be playing
The CPU usage on the 5600x gets around 30% higher on games than the 3700x
Depending on the game of course
