For cooling do not place the laptop flat on a surface that is covered in a fabric, ideally you want to have space between the bottom of the laptop and the surface it is on for air intake but even if you don't get a fan tray or something just a hard surface will be better than fabric.

Repasting the laptop's cpu and gpu with a higher quality thermal paste or thermal pad is also a good idea

Highly likely it is a psu issue. I had an 850w for my build too, same exact issue happened, though mine was after like, 3-4 years of using that psu

Replaced with a second hand 1000w psu, problems stopped

If it's a new build and you built it yourself, it could be missing thermal paste as well
Thermal shutdowns suddenly could happen but it's usually only if you don't put paste on at all
Or forget the cooler

If you did put paste then it's most likely a PSU issue
