Half of a flat iron steak salted left out in room temp for 30 minutes, and then just seared the thing for around 8-9 minutes on a skillet at medium-high with clarified butter i didn’t baste cuz it was alr at 130 internal when i took it out but i toasted whole garlic cloves spring onion whites and some of this fermented sichuan pepper thing my parents bought from an asian grocery store in the remaining grease alongside a squeeze of lemon and poured that over the cut up steak and potatoes in the bowl
