The on package integrated ram like on m series, lunar lake and panther lake is actually supposed to be really good so I don't mind those. Efficiency vs upgradability is a difference balance on desktop than laptop.

If you're only using one gpu then it won't really matter what motherboard you have. The only thing that affects is whether the primary gpu slot would be gen 4 or gen 5, and some boards have better support for using more than one gpu.
