Speaking of non-k skus, the 65w non-k i7-11700, got a deal on one with a B560 mobo and 16gb ram. I using a somewhat small mATX tower case. Question 1, will I be ok with temps if I've an 80mm front/92mm rear fan layout? Second question, it's non-K, I know I can't overclock, is a basic air cooler enough? I have tried the usual Google searches and every article is about the K sku. I will have the short stock Intel Collder and an old GeminII M4 as cooling options...
Stock cooler should be fine, maybe get a 212 if you're uncomfortable with temps

there's 1 92mm afaik, and a 92mm rad is barely enough to cool 50w

The infinity fabric speed (fclk) is only going to be stable up to a certain point, for most Zen 3 5000X series chips that's around 3800 (1900) max with a little voltage tuning. If you run memory at a speed faster than the fclk, then there's a delay caused by them being out of sync that can completely negate any benefit of faster memory if not reduce performance.

As Fitz said the chipset PCIe lanes are gen 4 on X570, and there's 6 more lanes at that. (The CPU lanes on the top PCIe slot are still gen 4 on B550, as well as the top M.2 slot)
There's also potentially 2 more USB ports on X570 and they can be a faster generation.
There's a couple downsides to X570 too, including the chipset fan (which can fail and makes more noise), it's more susceptible to the USB dropout issues (bios update may help), and the VRM design is often older so the power delivery may not be as good.
(b550 and x570 both have the usb issue, both supposedly fixed by agesa 1.2.0.2)

I have found that i receive much more game crashes than my buddy, he games on a ryzen 9 and i on a server processor (xeon), could this be because I game on a server grade processor that is not meant for gaming in generally ??

Ehh no, crashes are usually due to game files being corrupt, an unstable overclock or unstable drivers

I know for a fact that the MSI X470 Gaming Plus Max has one of the longest compatibility lists, from ryzen 1000-5000 including all the odd ones and ones with integrated graphics.
Max boards in general should have the best compatibility overall, since they have more flash memory for bios to hold the extra agesa code.

I just got my ASUS AM4 ROG X570 Crosshair VIII Hero (Wi-Fi) motherboard the other day... im in the middle of doing an upgrade from an X370 1st gen Ryzen 7 1700X... so like i stated i got my mother board but now I am trying to decide on what CPU to get... I was thinking a Ryzen 7 5800X but im trying to be some what modest with my costs... while getting the best bang for my buck if you will any thoughts?
I am running an ASUS strix 2080 GPU and want to utilize the PCI-E 4.0 for my PCI-E to M.2 card also form ASUS to expand storage... i had minor issues with lags and frame rate issues in AAA games as my setup stands now... i was more concerned with expanding M.2 storage and maybe frame boost... i was thinking Ryzen 7 or Ryzen 5... feel like Ryzen 9 is way overkill for me
If you're not getting a 5800X minimum and overclocking a lot with the crosshair then it's wasted potential

Hey, after I sent my B450 out to MSI for repair, I ultimately lacked patience, so I bought a B550 Gaming Plus.
It has the full ATX form factor, which helps me expand it with a video card I might want later.
