The only time I really mind random fruit or veggies going missing is if I'm specifically going for a full harvest (usually for aesthetic reasons) so having that one missing tomato will drive me crazy lmao

But 99% of the time all fruit and veg is available to anyone who wants it on my island

Since my island is sort of dilapidated/spooky, I sorta like the missing veggies and fruit every once in a while. Makes it look like the island has trouble growing crops because it's cursed lol
