i’m definitely biased, i love acnh and dislike stardew so take my opinions with a grain of salt but i prefer acnh because of the creative liberties you can take!! you can terraform freely once you get far enough in the game, you can decorate the exterior of the island however you want, the interior decorating is fun and especially dynamic with the dlc, making friends with the villagers is a lot of fun and moving new ones in; building up your island from a deserted island to however you choose to build it up and decorate is gratifying! you can make clothes, change your town tune, farm, decorate, it’s very relaxing and a nice lowkey game

the start of the game is pretty slow paced, but the more you build up your island the quicker the gameplay gets

additionally @crisp jewel, there isnt a particularly easy way to move villagers out, and there definitely isnt a fast one . kicking villagers out isnt in any way an intended part of the game . the above guide from quicksilver is your best bet, but you have to properly follow the requirements

animal crossing and stardew valley are very different experiences imo, but if you want to get stardew first because it's cheaper then go for it! it's very fun and will get you hundreds of hours of gameplay
