You cannot simply replace bridges or inclines, you need to destroy then rebuild them by asking Nook about it
(though I believe you need to be further enough in the beggining of the game)

The nicknames and greetings are player-specific, so I'm not sure if they reset if they no longer live on that player's island... They will keep the customized catchphrase as long as your friend doesn't reset it though

I'm pretty much sure they can appear anytime, including multiple per day. My estimation of "one every 4 days" was to mean like "I played a few hours every day (no tt) in that period and I found one one time out of 4"
But I never heard about it being unable to spawn again if you cault another one that day or yesterday or anything like that.

Agree with @shut jungle Always a medium and my best luck (got over two dozen) were the medium ones when I traveled to nook mile islands and fished their ponds and rivers. There always are tons of fish in the evening hours and medium ones almost exclusively gave me water eggs
