I've beaten 2/4 bosses and still have that run paused on my switch.
If I were to go back to say, 10 heat, would I be able to gain any bounties?

Yeah, the way it works is you get bounties for the lowest uncompleted heat, so even if you clear a bounty on 20 heat it will actually be the bounty for 10 (or whatever your next single progression would be)

so Ive reached only 20 heat so far but I decided to try pick up Hestia and just try it for fun for the first time. In the end I reached Hades but he was em4 and I couldnt do it but now I want to give it another shot since I got so far what's good for heat?
