cast boons have "priority", like attack and special and dash, which means that if you don't have one, you're more likely to be given one

Any time you pick a boon, you have a 10% chance to see an exchange for one out of Attack, Special, Cast, or Dash. So the odds are very low to see an exchange at all and even lower for Cast specifically.
As for priority boons: you're guaranteed to see at least one out of Attack, Special, Cast, or Dash any time you pick up a boon until you have all of those slots filled. (Call doesn't count for this.)
If you don't have any priority boon slots filled at all yet, you'll be offered 3 of the 4 priority boons at random.
That's what happens when you pick up the first boon in a run.

I wouldn't go for Tempest Strike. That has the lowest % of any attack boons, and the rarity and pom scaling is terrible, too.
Heartbreak Strike or Deadly Strike have the best % damage.

You can pick a boon with a penalty of less max HP for a few chambers, but that goes away as soon as you finish said amount of encounters

Count the rooms carefully. You might pick a 4-encounter curse, then be offered a non-encounter room, and carry over the curse to the boss fight 
That said, the HP increase and dashstrike bonus are great. Smoother sailing once you beat the curse

I mean if you select one boon from one god, does that means you're more likely to get boons from that God for the rest of the run?
Because usually my runs end with boons from only around 3-4 Gods

so there's this thing called the God Pool
when you take a boon from a god (other than hermes and chaos) then that god will be added to the pool
when your pool has 4 or more boons in it, you will only be offered boons from that pool
if you equip a god keepsake, you will cause that god to appear, even when they're not in your pool
generally speaking, having a small god pool is stronger
because you have more chances of getting tier 2 boons that will make your situation stronger

kill the bull first, learn attack patterns, use the pillars to avoid taking damage, make sure bull is dead before you get theseus to his second phase, when you see a pink crosshair on you that means that theseus is gonna throw his spear at you, after he throws his spear he will turn around which means you can attack him, when he is in his second phase you should spend more time dodging the things he summons

Most aspects don't really shine until Lv.4 or Lv.5 tbh. Aegis, Coronacht, Malphon, and Exagryph are the best out of the Zag Aspects. But the Titan Blood for Zag Rail is probably better spent on Eris. Eris is genuinely broken at Lv.5 and still very strong at Lv.1 or 2.

using Twin Fists - consecutive hits do more damage, dash hit pierces armor, and whenever the special slays foes gain health

Aphrodite's Aid does better damage.
And with the right build, you can practically perma-charm the final boss with Aphrodite's Aid.
You can also make Theseus and Asterius kill each other.
