A lot of stuff kinda just falls off there because there's a lot of enemies and they all have a lot of hp lol
If you're struggling it's most likely a build problem, which is pretty easy to fix
If you recently reached Elysium then it's gonna take some time to learn enemy patterns and whatnot

that's part of the game, dying is fine. It's all about building your character up and before you know it you'll be super strong
dying is part of the story, so the game is designed for you to die often early
just make sure you're building your mirror up, and unlocking new weapons, bow is a good weapon early on

Finally made it to the end, beat Hades' first phase, then suddenly he got a whole second health bar and it just seems unfair
I hope that at least making it to the final boss is satisfying for me. I mean, hey, I beat Hades technically, so I shouldn't feel bad for not beating him a second time in a row.
But I don't see myself completely beating the game at all, especially now that it feels like a chore.

But It's not even that I can't do it. I can always just upgrade death defiances to have three.
It's just, repeating everything over and over again kinda got tiring. By the time I get to Elysium I just yawn. I was happy to at least get through Styx on the same run I got through Theseus and the minotaur, but atp I just feel content.
I had a similar issue in Indivisible where I just clocked out before the final boss. It's totally a me thing, not the actual game'd fault.

Just invest in what seems to be the most fun. There is a pinned post here about which weapons are good at low levels and what to invest in first, but you're way past that point so I doubt it'll be that useful.

Just practice and try to time your dashes properly. There is a cleansing pool in every room if you get poisoned so use that. Always take miniboss doors first.

Rarity increases the highlighted number. Like, you know when you pom a boom and its number goes up? Higher rarities have a higher base number and tend to benefit more from poms too.
So common Zeus chain lightning does 10 base damage while rare does 13 or so

Boon levels are poms. Basically think of rarity as a higher starting point.
So instead of picking something that does 100 dmg, if it has higher rarity it would do say 120. But the increase from the levels is still the same.
