there's a sound and visual indicator for that

staying near the edges is optimal because if the bull wants to charge at you, you can lead him into the walls or pillars. pillars are harder to do, but it's doable

If you spam it wildly that's how you'll end up in trouble, but timing it to evade certain attacks entirely will help a lot

I really appreciate the extra difficulty, everything in the game has felt exactly how I want it so far, but my god Theseus and Asterius are impossible. I'm 30 runs in, I've killed Asterius once. I think I understand the play -- just dodge and backstab Asterius and ignore Theseus, but I'm doing so little damage to Asterius that I'm losing the fight out of attrition -- it would probably take me north of 20 minutes to win the fight, and I just can't focus on dodging two different bosses for that long.

Are there any go-to easy win builds?

I normally try to keep a pillar between myself and theseus while focusing on asterius. Like just 1 second to look around where asterius is then i dash behind a pillar so asterius follows me too.

Preferably, getting poseidon or Ares call helps too since you can damage with invulnerability for a short time.

I find whatever build i have, if i have one of these calls, it helps me a lot.

If not, i have Hermes boon for multiple dashes to keep myself away.
