Part of the reason SGG used Zag as their protagonist (originally it was Theseus) is because Zagreus only just barely exists in some myths.
Beyond "son of Hades/Persephone" and "conflated with Dionysus in some myths" there is virtually no information.
Like I read in the original story of Zagreus he is actually connected to Dionysus but in Hades Dionysus and Zagreus just make that up to trick Orpheus into creating a song

as for ares and his interest in the underworld, thats actually something nice and good because like. we already know the olympians look down on underworld gods, this is in the dialogue. its not implied, its said out right that they typically have little regard for them. in addition to that ares himself is not well liked. its toned down quite a lot in hades but the hints of it are still there in how the rest of his family talk about him. so the way i see it, ares's interest in the underworld gods is like... a misunderstood god seeking out other misunderstood gods

||Today I finally reached Persephone for the first time and holy bones did that conversation break me like a Thanatos special move.
My youngest had to go to the NICU when he was born. He’s fine now, but I will say without qualification the night I had to leave him in the hospital while I went home was one of the worst of my life. A entire wing of the hospital is full of people watching to see if flames on heels will stay lit. Sometimes they don’t.
Zag getting pulled back down immediately put me back to getting wheeled out of the NICU after visiting hours. Your kid is trapped in wires and tubes and walls and bureaucracy and they have to stay while you leave for the surface.
It’s way past bedtimes as I write this. I went and cuddled sleepy boys anyway.

After you have access to hidden aspects in general from getting Guan Yu to reveal itself, spend at least 5 blood on Fists and talk to Asterius in his miniboss encounter in Elysium until he comments on the fists.

Thanatos puts up a really hard front but he's basically just scared at first that Zagreus is going to leave the family if he figures out a way to stay with ||Persephone|| or the Olympians, but goes out of his way to help him anyway because escaping is what Zagreus wants to do. He's hyper critical to people he cares about like Zagreus and Hypnos but his interest is purely in actually helping them with his criticism. He's also a real momma's boy.

You can squeeze a little pre-game backstory out of him and Nyx from their conversations. It seems like Thanatos and Zagreus were close friends as adolescent gods, believing they were brothers but that didn't actually matter much because Thanatos makes it clear that he doesn't care about someone just because they're his sibling. Zagreus, Charon, and Hypnos are really the only siblings he's close with.

I'm pretty sure the specifics of increasing Than's RNG have been datamined and you only have to get hurt once every couple rooms for the maximum effect so don't feel obligated to get hurt you probably will anyway unless you're really trying for a no hit run.

Mannn Than came back, I got one of the Duo boons I was trying to get, the Flame Wheel’s Release FINALLY appeared and I got the resolution of the Theseus and Ariadne mini-plot, everything’s coming together in this one run

Basically... once you have gotten the first Thanatos (scripted to only appear in Elysium), start a run and take a hit in the first room of Tartarus. Every 3(?) encounter rooms, take a hit if you haven't yet again. As long as you have taken damage recently, he has a chance to spawn in an encounter capable room (but never in Styx). If you haven't taken any damage I... don't think he spawns at all? Not actually sure if no-hit-runs will disable Thanatos entirely.
