Each Chthonic Companion requires you to complete a Favor, or quest, for the character in question. After then gifting them an Ambrosia, rather than Nectar, they will give you the Companion.

My understanding of the characters of the weapons is that they are acausal manifestations of the concept of "weapons", and can manifest different aspects of prominent wielders to provide Zagreus more circumstances to be used in combat and gather more blood to sate their hunger.
Their sentience and communications with others that I've seen in game have all been in service of either getting more chances to smash stuff, or get fed more blood.

(you spin so it's over where an enemy will spawn so that it immediately gets hit and you heal)
