The Codex mentions both Hestia and Hera, so it seems probable that it'll be one of them, but they also seem like the toughest to implement gameplay for. Apollo, Hermes, Demeter and Hephaestus all seem to have much more obvious angles for Boons

We already have Artemis; it would be odd to see her without her brother, not to mention Apollo's obvious connections to the Trojan War and Achilles (which have already been brought up in Aphrodite's side convos)

I think the fact that Hestia and Hera have gotten shoutouts but in a more minor way means they might not be showing up
Demeter would cause all kinds of plot shenanigans if she were to be involved, considering Zag's parentage; I imagine she wants nothing to do with the Underworld, or with Hades' child.

I think if we get Apollo in the game, he will either end up with his primary aspect as either healing or the Sun. We already have a Charm on Aphrodite, and confuse on Dionysus, so I don't think music would really be that different from him. And Artemis is archery, of course.
So that leaves healing, and sun stuff. Only thing is healing is the domain of a lot of gods, but a little bit of a secondary trait. And if we are assuming the entire Olympic Pantheon will show up, Hermes and Demeter will have some overlap there, and we already have some from Poseidon and Dionysus.
So I expect him being a cool sun dude, with maybe some healing and other traits on the side.
Of course the thing I am most hype for is the LORE

especially since you can only usually get heat by beating the hydra which is kinda time consuming

I...usually trade Heat, just because I'm not applying heat as fast as I'm getting it, so it's a reasonably expendable resource. I've been taking it slow with increases.

I've been doing a new playthrough recently. I spend all my heat for keys (mostly because I only have one mirror upgrade unlocked). Once I've done that and unlocked the core essentials and the other four weapons, I'll keep the heat. Running Dio generates/incentivizes a healthy amount of that good good contraband, to secure keepsakes ASAP. (Although if you don't care for convos or getting ALL trinkets, you can consider this free to trade with anything)
Priority for me has been:
keys(for core mirror upgrades and weapons of choice)
darkness(up to what I need to clear consistently)
heat(up to what I need to boost my darkness % but still clear consistently, then trade for darkness)
amass large amounts of darkness(the ultimate sink, mainly due to the reroll mirror mechanic. Usually, once you're at this point, it's probably good to just commit to X for darkness trades)
