Thanatos requires you to beat him in one of his encounters, then dialogue at the house will eventually unlock his hearts
It may take a while to get, which is the case for a lot of characters

There's a lot of dialogue in this game. 99% of the time when somebody asks these questions it's just keep doing more runs and talking to everyone and give out Nectar and Ambrosia when you can.

Zeus shield is amazing but very hard to learn. Chiron is great for early clears. Eris takes a bit of practice but can do some really crazy damage.
Hidden shield and hidden bow are both incredible
Achilles is really fun with cast builds like hunting blades or crystal clarity
Hestia is also really good but definitely has a learning curve
Beowulf?
Beowulf is probably the best aspect in the game

Also look for chaos grasp boons and shot boons
Mirage Shot is actually bugged with Beowulf so the cast copy does 100% damage instead of the stated 30%
Also are you playing on controller?
If so, I suggest mapping cast to a shoulder button so you can cast while charging bull rush
