Well here's a rule of thumb I generally follow:
High damage but slow attack speed? % buffs. Poseidon, Aphrodite, Athena, or Demeter
Low damage but high attack speed? Flat damage buffs. Stuff like Zeus, Dionysus, Artemis.

Ares is a weird one for me, but he can honestly go both ways.
