Here's a long answer to your short question:
is your early-game relationship progression, Each run, you can give each of the characters you meet 1 nectar, in order to progress their relationship gauge and move on with the story.
The first nectar you give to every character, they will reciprocate and give you an item of their own; these items are called Keepsakes. "Keepsakes hold power," as I quote Zagreus. During a run, you can equip a keepsake in order to gain their special effect until you unequip them.
Every nectar you give after the first one only serves to progress story. (which is the main point of the game)
Ambrosia, the larger, whiskey-looking bottle, is for late-game relationship progression. After you max out a character's heart gauge with , they usually have a task/quest before you can start giving them Ambrosia. Ambrosia serves as a way to finish the relationship, per se.
