When roasting coffee green beans, there's a phase called first crack. It is when the coffee's moisture inside the beans evaporate and build up pressure. Eventually cracking the outside layer from its build up and the beans exploded. This usually happens when the coffee reaches around 180 to 190C. Protocol for roaster is to get a whiff of the aroma in this phase to get a sense of development for the coffee beans.

so here's why it's expensive. Putting aside the gesha variety itself, the processing is what makes it even higher. Anaerobic process, you put the coffee cherry in a barrel of water, put yeast, close it up, and let it ferment. idk about thermoshock, haven't seen any processor that use that. Problem being, even if they're the same farm and seeds, fermentation would instead degrade the green coffee beans.
