You can though, demos for example are a great way of that. The only important thing really is a publisher. Steam lets anyone put their game on the market aslong as it doesn't break their TOS for like £100 and gives it back if you sell I think 100 copies

But it really does help there's no denying that

I mean, if you make a demo, people play it and like it and it picks up a little bit of attention then you can probably get with some publisher

The only thing is that not all publishers are created equal and some can be scummy

You also don't NEED to publish your game because of steam and itch, and alot of indie developers don't do so

You could also build up rep and experience by modding existing games for free and bringing over your fans to a new project
