its generally a good idea to base the loader off the sort of mods you want to use
if you really want thermal series, which is only forge, then use forge
if you really want <some random fabric mod>, then go for fabric

At the end of the day, yes, the performance difference isnt a big deal. With low mod numbers you'll probably find fabric has slightly better performance, but it depends

I dont think that supports some optifine features, specifically the resource pack ones, and it definitely won't break as many things as optifine, but it should allow shaders, dynamic lights, zoom and performance like optifine does

Np. Currently the Standalone supports WoW and Minecraft, but my expectation is it will not support the Sims as quickly as the OW-included version will when the time for that comes around. I could end up being wrong, but that's my best guess on the Sims front.

If I understand the question then in you minecraft then press the cog wheel to bring up settings. Under that menu is a game specific option. select minecraft, about halfway down is a slider bar that lets you change ram amount.
