My understanding is how it initially worked was each migration zone symbol is/was a different food type, back when herbivores had more unique foods, and so for the carnivores the different symbols would apply do different species of herbivore

Personally as a herbivore, the migration zones sometimes have more food... but they change fairly often and most of the time before you even get there.... so for me they are useless. Patrol zones reliably spawn all the diet foods and are closeby.

I haven't played herbivore but according to the wiki it's not that it's more food, but that inside the zone each food gives more diet
