Whenever you want back in Evrima, rename that folder to "The Isle Old" or whatever suits you, and rename the folder that's named "The Isle Evrima" back to "The Isle"

TLDR Steam launches whatever folder is named "The Isle" rename the versions you want to launch "The Isle" and it will launch that.
