Lighting manually in games, whether with lumen or with light bakes requires careful placement of post processing volumes, reflection captures, and "fake" light sources. Even if you put a point light inside of a torch, it may not look right unless you put four other point lights in the area as well, due to how Lumen and reflection captures work.

Lighting with Ray Tracing just means you have a light source wherever there should be a light. A torch, a lightbulb, the sun, etc. You just put the lights there and say how bright they should be. Then you click the button, and it does all of the stuff for you in real time

Also, regarding the concern about HDD's wearing out from video editing, it sounds like you just want lots of RAM
SSD's are are a type of RAM, maybe you think it will help you edit videos faster? Treating your RAM as a disk will not make you do things faster
