Place mining stations on the ores to mine them. Here's how much moon money you can earn from them:
Helium 3 (blue) - 100k
Genericum(grey) - 200k
Pocconolum (green) - 300k
Ore deposits can get deleted over time. This is random and there is not guaranteed duration for the ore to be useful. Once the ore deposit is depleted, you will get a notification. Mining stations have a cost and once the deposit is depleted it will no longer produce income and therefore, it would be best to remove it.
Mining stations have to be provided both water and electricity for it to function.
It would also be wise to leave a couple of deposits so you can complete the mission which will be given to you by the moon pickle once you have reached a certain point.

I find having residential/dense residential properties and happy citizens increases tax profits. I just started yesterday and i have $6m from upgrading and idling in game. Im sure there are other ways too. Look at your rating tab (green smiley face icon) and whatever is low, upgrade it.
Also, pay attention to the graph chart on left side of screen ( 3 color chart). Whatever zone is in demand, build it to increase population and in turn, taxes, revenue etc.
I could be totally wrong but this is the path I've found and it's worked for me on sandbox.

No problem dude. I also found that if you build your city properly, with schools/hospitals/fire/police etc, you can idle without doing anything and passively accrue massive income while in game for as long as you want.

Happiness doesn't necessarily have an effect on tax, but the wealth does. Happier residents have more wealth.
