Adding a pump is a quick and easy thing to do but it's also one more failure point. To some degree, if the heat source is on the bottom, it's like the difference between an oven and a convection oven, assuming you are cooking in a covered dutch oven

Pumps were popularized around the time "sous vide sticks" started to become affordable like the anova one and the sansaire.

That said a pump helps a LOT if your vessel is pretty full and the food is cold, which would prevent the top from cooking properly at the beginning otherwise
