So I think I figured out my smart switch + smart bulb conundrum:
Smart switch with ESPHome: Relay set to always closed, button press makes a toggle request to HASS.

In case of infra problems (checked via binary_sensor.status) failover to relay controlled via button like a dumb switch.
Smart light always on when switch is connected to HASS.
In case of powerloss (eg. simulated when switch loses connection) set to always turn on after power return.

@chilly nymph Windows has a rare habit of sleep of death. Damn thing will look dead/off when its locked into a sleep of death. Have you held the power switch for 10 seconds to force it to do a hard power off? the power switch hold is detected by the mainboard and it powers off.

I am going to install some solar panels but I am figuring out placement, I want to see if my neighbours house blocks light a lot when the sun is setting. So I have planned to chuck some ESP8266's on my roof with these sensors: BH1750. (4 of them and record the output to influxdb over 1 week). Is this a dumb idea?
