A coral can do like 100 detections a second and seems to do 4 or 5 every time it detects motion. You can configure a different stream for the displayed feed and the feed used for motion detection so you can set a slower framerate for detection too

Problem you have here in NZ is the last-mile access is pretty great - nearly 90% coverage of the country with "gigabit" GPON (usual DL/UL about 900/400Mbps), and options for 2/4/8G - but since half the stuff you want isn't hosted/cached/mirrored in-country, latency is a massive throughput killer for everything else
