Anyways, you don't really choose what server you get dropped in, though you CAN server hop if your server is too hostile.
The server is your crew and a bunch of other crews.

You can either make alliances with other crews or kill them all to get their treasure.

The core gameplay loop is basically:
-Get funny quest
-Use your boat to sail through islands to go to the spot marked in your quest (the sailing system is suprisingly fun and interactive btw, especially with multiple people)
-Do thing you need to do in island
-Get loot
-Sell loot

Although as you progress, quests get more complex and longer, and span multiple islands, there are a lot of different world events that can happen with a bunch of cool enemies and loot,
And there are a LOT of very fun quests like going in an ancient vault to get ancient artifacts to sell, battling a DAMN FLEET FULL OF GHOST SHIPS, THEN SELLING THEIR GHOST REMAINS, going to a SUNKEN SHIP TO RECOVER THEIR LOOT, and then there are the boring starter quests like delivering bottles like you're some sort of delivery guy

Well, it depends.
Starter quests are like 10 minutes to complete, then about 8 minutes to go back and sell shit, so like 18 minutes each since they're just one island

But then there are the voyage quests in the late-game that go through 8 or more different islands all across the map, fill your boat with loot and take anywhere from 40 minutes to 2 hours to complete

depending on if you get distracted or not

and start messing around

i advise you to mess around

it makes things more fun
