Yes, but the Poison type moves I'd learn as a Umbreon/Weezing-Weezing/Umbreon aren't really good. It's just Smog, Belch, Poison Gas, Clear Smog and Sludge. So, I might go with Gengar/Umbreon because it seems better. I could be wrong but at least I already have a Gastly, so I don't have to go looking for a Koffing.

Hard to judge. Necrozma was added a couple days before the update released and rockruff line was actually added after so those have the least in the game but I've been seeing A LOT of sprites for the Rockruff line so it'll likely jump

Zapdos itself has a few Galarian form alts. Groudon, Tyranitar, Raichu, Hitmonlee, Dragonite, and Ho-oh have ones that are built off of the Galarian form. Zapdos double fusion also has a straight up Galarian form
