There's too many to list. I'm making a document of the best ones I've found though.

In general, Marowak, Azumarill, and Pikachu make really strong fusions because of their gimmicks/abilities, but that's just from an offensive perspective.

Azumawak is probably the most infamously powerful fusion.

One of the best typings in the game, great coverage, and Huge Power + Thick Club.

Unboosted with all multipliers, it sits at 1048 attack.

Its other stats are a little meh but that hardly matters with that much power, and it has more than enough bulk to survive a couple hits.

Seaking/Arcanine is decent. Not game-breaking, but fun.

Water/Fire type with access to Lightningrod, which means it's only weak to Ground and Rock, both of which it threatens with its Water moves.

Problem with most Metagross fusions is they're strictly worse than Scizor fusion equivalents, since Scizor gives almost everything Metagross does on top of Technician.

Klinklang/Scizor gets more attack and natural bulk, and since you get Shift Gear + Bullet Punch a couple points extra in Speed isn't that important since you outspeed everything after a boost.
Still, nice find. I haven't been thinking as much about Eviolite mons, but there's definitely lots of good options. Blissey/Doublade comes to mind.

Fusing Pikachu with anything just turns that thing into a nuke.

Although Pikachu's defenses pull its bulk down quite a bit.

It's a balancing act of finding good partners that can get past the underwhelming stats and use the Light Ball properly.

Marowak and Azumarill have less of that problem since they're a) fully evolved, and b) have at least a few stats above 100.

The one item-specific mon I haven't been able to find success with is Farfetch'd.

Just because how tf are you supposed to make Farfetched work?
