Unfortunately side grips are a common issue, Mine are peeling off too I'm afraid, I'm not that concerned but I can understand why people are. but as for the second button, I'd advise contacting steel series support and see how they can help. Hope that helps.

Shadowplay can only record one desktop audio source + a microphone audio source. It doesn't have the capability for multiple desktop audio tracks. That's why I stopped using it and moved to Moments (even if it is in beta)

Only other alternative that I know of would be using the replay feature in OBS and set two separate desktop audio sources for Game and Chat
