Erina leaves the boat basically immediately in the coffin after leaving Jonathan. Dio was sitting there in Jonathan's arms for a short time while Jonathan died. Then Dio would've still had to attach his head and travel to the coffin. I'm not saying it's hours or anything but even if it took like 2 minutes, that's still quite a bit of time in a situation like that.

“In Jorge Joestar, as far as I know, there is explanation. Coffin had double bottom and Dio escaped with Erina. Then she was drifting there for some days, giving Dio her blood, so he couldn't die (in exchange, he didn't kill her). I don't know if that really true, still waiting for fully translated light novel, but at least, it's some explanation.”
