The question is more complex than that in reality. "How much do they produce", well are we talking how much the average human breathes out in a day multiplied by the average number of people working in their offices over a year? are we talking specifically about their servers, and assuming they are operating their own DC entirely and are thus the producers of the CO2 and not simply a customer of the producer of the CO2? Does this make them the producer? If it does, do we still count the DC as a producer? Are we calculating their vehicle emissions? Do they get bonus points for taking clean air public transit? I could go on

Sponge is stable on 1.12, I think nearing release for a 1.16 version but when you want a server with Plugins (server mods) and Mods (client mods) then you probably want Sponge even on 1.12. They have their own discord, which can be found in #community-guilds.
