PHP syntax is pretty good, PHP's main fault is the older standard api's, the newer OO API's arent bad, so a code base thats dominantly your own code isnt bad in PHP.
The primary issue with PHP then becomes parallelism. PHP does support threads with a module though, and I believe that the PHP MC Server did use that.

postfix+dovecot makes things pretty easy now.
And with Letsencrypt you get certs for free and integrate easily.
