So what bottlenecks (not sure if this is the right word) MC servers hardware wise? I'm not familiar with hardware aside from like RAM, but I if you set your MC to have 60GB of RAM I'm pretty sure your server would be really laggy way before you hit 60GB. Is it the CPU not performing computations fast enough after some point since MC is single threaded?

The answer is that it's complicated.
If you have a single user and no plugins then you can have a fast server.
If you have a bunch of plugins then it depends on what the plugins are doing and what kind of resources they're using.
But for a vanilla server instance with like a 3GHz CPU and 64GB of RAM it depends on how many people you have online at once and how many chunks they're loading.
64GB is a lot, though. You should be able to have a lot of users online at once with a lot of plugins unless your server is configured very poorly.
