If it wasn't "Caucasian" but rather just "white", then "he is white-skinned" (or light-skinned, as the counterpart is dark-skinned rather than colour) would work. It's a phrase converted to a single adjective, hence the hyphenation. Like "he is 10 years old" == "he is a ten-year-old" (also notice how years became singular)
I can recommend watching TV shows and movies with subtitles. Even if the subtitles are in your language, your brain will hear the words and get some stuff. But the best is English audio + English subtitles :3
