10 minutes is the time I need to adequately explore a stage for the loot and whatnot

And with a game that is procedurally generating levels I might need longer

Also I wonder how they'll do co op in a roguelike funnily enough

It's because for me when I play roguelikes they're supposed to be an individual test of skill so I wonder how they'll translate it over instead of making it feel half baked

Tbh the 5 min stage thing isn't very accurate, since in ROR2 the speed at which difficulty progresses increases as you complete stages, so 10 mins in stage 1 is 3 min in stage 5, So the best course is to play as fast as possible, but to not skip content, even if it costs extra time, as the earlier you complete it the less it costs in terms of difficulty.

Though I hope they don't put soft timers like ROR2 in RC, since from my experience soft timers don't help to encourage cooperation, and instead cause a lot of friction between players.

A hard timer (like the one in Spelunky) would be better if they did go with a timer, immediate consequences for staying in a stage/area to long without effecting the next.
