Jesters should be good enough for eater, then after that queen bee/skeletron would be next. You could also do Deerclops, although I don’t think the pewmatic horn is great. He does have Chester though

The alternative sources of meteorite? You can find it as secondary loot in gold chests just above hell. Not the most reliable source. You could also kill skeletron or get lucky with a chest close to the dungeon entrance and get a shadow key to get bars from shadow chests

it can be a bit tricky to start, so you might take a few hits getting the pattern setup
but basically, you need the flight accessories, and then focus on flying circles around her
if you do it just right, she'll rubber band above and below you as you rotate around her
and if you keep yer distance just right, she won't attack, at all
