This happens when you either quit without saving (alt+f4) or sometimes when using cloud storage it can corrupt data. It is recommended to always save, make back ups (copy you player/world files and store them in a separate safe location. For windows you can find the player/world files at Documents > My Games > Terraria), and of course turn of cloud storage especially onedrive that app is so annoying

for restoration there is a process but it's not guaranteed and it can be annoying

An easy tactic is to hide in a house and whittle their numbers with spider sentries

I use a floating box against the pirates. The Dutchman latches onto the side and you can whip it. Minions and sentries take care of the pirates below and you can whip the pirate curse ghost too

There is pretty much no good way to take the pirate head on at the start of hardmode
