You have to get that 90% AND the 10%. Or in other words you have to complete all the mission objectives in one playthrough, which means doing that "kill all fleeing bikers" one

otherwise you can make yourself feel like a cop by dressing up as highway patrol with either michael or trevor or following police cars that are chasing other cars. There are some random events where you can help a police officer catch a fleeing criminal or I know of one further up the road (like 3/4 to sandy shores) from Martin Madrazo's ranch where you can choose to either help the cops, robbers or take the money and help neither in a shootout

Oh nice! , actually i got 2 bugged trophies which are franklin's taxi mission after he buys the property (can't get the call for the mission at all), and another trophy called altruist something which is basically getting a stranger to a cannibal cult instead of their destination (cant find any stranger in the locations i looked up in yt)

Well i'd watch the gta series videos playthrough and see how they did it. It seems they used trevor's ability to kill the fleeing ones and they killed all the enemies around the sides to let the bikers in the middle area be the fleeing ones.

Just get all Strangers and Freaks missions out of the way as there are maybe 3 hard ones in 40 odd missions. In the main story missions, do heist preps and Lester assasination missions. Also go for Michael’s missions such as Doting Dad, which is extremely easy. Last, the rampage missions should be doable, but for gold medal all the requirements must be met at first try.

The Taxi mission is usually taking quite a bit of time, so just drive around without alerting the law. Also, if you ever declined the call from the Cab Company, they never call you again. Final thing, if you kill the manager there they also don’t call you again.

For the Altruist Cult, there is a motel in Grand Senora Desert where you’ll find a couple at night time (or early morning). You can just drive them to the Altruist Cult then.

I would then advise you to wait still by just driving around. If you don’t get a call in 30 minutes I would say load an early save file.

it will remain the same after the mission (i.e. your save file will still look like it did before you did the time's come and something sensible). It works the same way as if you replayed any other mission. For example if you replay the jewellery store job then you wouldn't get the money you earned in the replay because it doesnt affect the current game save
