I'm hardly qualified to explain anything about German, so take everything I say with a grain of salt. But, to me, it depends mostly on context. The difference feels like this
[das] Volk = the people of a country, state, ethnicity, et cetera. It refers to a large group without really distinguishing any individual members.
"Das kurdische Volk." = "The Kurdish people."
[die] Personen = people on a way smaller scale, putting more emphasis on the specific number of individuals that are involved. This would be more applicable for referring to the capacity of something like a room or an elevator, for instance.
"Diese Gruppe bestand aus sechs Personen." = "This was a group of six."

Which resources should I use?

It doesn’t really matter which resources you use, as long as you can follow along, and the information is correct and reliable. If you have any doubts about whether a resource is correct, feel free to ask. You do not need to find just one resource and stick to it – in fact, to learn best, it’s recommended that you use a large variety of resources and switch between them when needed.
