Yea, you have up to 3 normal dispatches. That just collect some simple things. And up to 2 special dispatches to do daily activities

Really, it's up to you. Overall it's a very unimportant part of the game.
Just an example of how I use it. I exclusively do the 3 standard dispatches for the SH seal currencies. The raid, adventure seals etc.

I ONLY do those because I use those seals to buy the item to make feasts

If you choose to ignore that part of your Stronghold it's no big deal. But you can find some niche uses that may fit your needs

I'd recommend watching a YouTube video on it. If you're prepared before entering you can earn a lot of gold worth of lifeskill mats

Balance patches happen very frequently that can completely change what class is at the top. I’d suggest just playing whatever looks cool.
