To be honest, there are several reasons for this. The problem now is that many game hacks can bypass a normal anticheat system [which only runs and is started during the game] using simple methods. Kernel level anticheats starts before your operating system has even booted. Which means that this has a lot of rights on your PC. So it doesn't just cover one process or part of your PC, but the whole thing. Of course, this doesn't stop people from cheating completely. What is becoming more and more โ€œtrendyโ€ are DMA's cheats [Direct Memory Access]. To explain it simply: Another โ€œcomputerโ€ is connected to yours, this one reads the entire memory to potentially change it. Because there is no anticheat running on the second PC, let alone the kernel anticheat on your main PC has no rights to the second PC, it is difficult to detect this correctly.

Yes, that's the problem with something like that. No matter whether it's kernel level anticheat, an external antivirus program or DMA cheats. As soon as it has complete rights to your PC [and even takes over], anything can happen, or others can use it to their advantage.

So far, thankfully, no real case is known where someone has hacked into a kernel level anticheat to take over/spy on PCs. However, Crowdstrike has shown what damage a wrong update can do, for example.
