Intel 12th gen are currently crazy bang for the buck with the DDR4 platform. Less cores but way stronger single core results.

Ram sounds good but what Clockspeed and Timings are they, your system (especially with a new CPU) will benefit from faster ram for such workloads.
(If you really want to get futureproof Ram, I'd look into the ddr5 platform but since the maturity in that platform is still lacking I'd go with ddr4 for now)

Honestly, if you already have that GPU, keep using it until it breaks since you won't get anything worth the cost right now anyway.

With those other components, I wouldn't really worry about the power consumption of my storage. As long as you don't accidentally get 5400RPM HDDs, you're fine. Only get an m.2 NVME if you're upgrading your motherboard because otherwise you're not really gonna benefit that much as opposed to a SATA 2.5 inch ssd.

I can't say I'm opposed to your PSU choice. I'm personally a fan of Corsair's lineup, especially the current RM series have been quite the good deal for their performance. But either work.

And since youre not really running that rig as a server either way, i think the 10 cores you get from a 12600k are enough for you
