Quick and dirty design:
Fighters: small airframes with the best single engine you have (not jet/rocket), max heavy MG you can fit until you unlock large cannons, then max those. 1x extra fuel tanks, then stuff that boost air defence (self sealing fuel tanks, armor plates, defence turrets) until you run out of thrust room. High frequency direction finder optional.

assign all your troops as frontline order in the ethiopian front, in the start you 46 troops, so 24 in the north and 22 in the south. after that make sure your first focus its the suply for ethiopia. after that just battle plan it with 2 generals and 1 field marshal. put your field marshal on aggresive

See, that's another thing I feel like I'm doing wrong. Just as a test run I went all in on fighters and had around 2000 of varying quality (not overcapping the airfields) over southern france. I also made sure that they had plenty of fuel, but even with that the airspace was still red.

La resistance is more useful if you play against +4 ai since that's really the only way to still get 2 years advance research bonus
